What is soy sauce?

Soy sauce or soya sauce is a Chinese condiment made from fermented soybeans, salt, wheat, and fermenting agents such as yeast or mold. It was created about 2200 years ago during ancient China.  It was developed to preserve food and add taste since salt was expensive.

How to make soy sauce

Soy sauce can be made in two processes. That is;

Traditional production

This involves soaking soybeans in water then roast and crush wheat. The soybeans are mixed with the crushed wheat, then added a culturing mold mostly called Aspergillus. It is left to develop for 2-3 days.  Afterward, salt and water are added then the mixture is put in a fermenting tank and left for 5-8 months to last longer.

During this period, the enzymes from mold react on wheat protein and soy. This process results in breaking down into amino acids. Moreover, the starch is changed into simple sugar and fermented to alcohol and lactic acid.  When the aging period is over, the mixture is put on a cloth and then pressed to give liquid. This liquid is pasteurized to kill bacteria then packed.

Chemical production

Chemical production or acid hydrolysis is a faster method. It involves heating soybeans to 80 degrees Celsius and adding hydrochloric acid. This breaks down proteins present in soybeans and wheat. Since the mixture has less taste and aroma, it is added extra flavor, color, and salt.
